Food and Beverage Service Skills (Events)

Programme objectives

The service skills of the staff at your event make or break the customer experience. Waiters need to have a good understanding of the concepts involved with working in functions, service skills, and interpersonal skills..

The 2 day programme covers the following outcomes:

Day 1

  • Personal Hygiene
  • Uniform and equipment
  • General safety & conduct
  • Communication Body language
  • Do's & don'ts
  • Understanding the function sheet
  • Different function venue set up styles
  • Different function types and their purpose (cocktails, weddings, seminars)
  • The boxing of tables
  • Setting a tea and coffee station
  • Refreshing the venue
  • Methods for charging for beverages at functions
  • Event AV equipment terminology
  • Environmental controls
  • Understand the kitchen environment during service
  • The importance of taking instruction
  • Identifying cutlery and crockery
  • Identifying glassware

Day 2

  • Setting the table
  • Changing a table cloth
  • Laying the cover (Breakfast/Lunch/Dinner)
  • Set menu and buffet covers
  • Folding the napkin
  • Glasses & their uses
  • Seating the guest and introducing yourself
  • Alcoholic & non-alcoholic beverages
  • Holding a plate and carrying plates
  • Bread service
  • Plated service
  • Clearing plates
  • Dealing with spillages
  • Changing an ashtray (outside/smoking area only)
  • Crumbing down and preparing a table for dessert
  • The order of service (scheduled timing of food service)
  • Serving cold non-alcoholic beverages
  • Opening a bottle of wine
  • Presenting, opening and serving wine
  • Tea/Coffee service
  • Handling a guest complaint
  • Presenting the bill (cash bar)
