The AHLE-X  Chef Professional Development Programme, is run in Cape Town, South Africa over a one-week period. The programme is designed to:

  • inspire you through exploration and experience;

  • equip you with management and advanced culinary skills through a series of seminars, practical training sessions and courses delivered by key speakers, culinary experts and training providers;

  • Experience dining at 4 top Cape Town restaurants; and

  • Experience first-hand food tasting, demonstrations and food innovations.

  • provide you with an opportunity to work alongside chefs in industry for 4 days in a top 4 or 5 star hotel (optional 4 days).

The AHLE-X Chef's Professional Development Programme has been designed for middle to senior chefs working in the Hospitality Industry that desire to gain more insight into food trends and kitchen operations in a City that is the tourist capital of South Africa. The following programme outline provides you with an overview of the one -week programme that you will experience during your stay in Cape Town:

On arrival

You will be collected from the airport and transported to your accommodation.


You will attend the following seminars on topics that are pertinent to Chefs in the 21st Century in Africa:

  • Greening your kitchen

  • Cost control and menu analysis

  • Marine Stewardship Council on Sustainable Fish Resources and SASSI

Practical Culinary Workshops

Attend a half-day workshop in the Lindt Chocolate Studios where you will learn Advanced Chocolate Décor

Attend a full-day practical cooking class on "Nose to Tail Cooking"

You will be transported to and from seminars and classes from your accommodation for the duration of your programme.

Tours and chef's tables

As part of your programme you will:

  • Visit 3 award winning Cape Town restaurants.  
  • Visit Franchhoek, the Food and Wine heartland of the Western Cape for the day, were you can take in the culinary delights enjoy lunch at the well known Bread & Wine Vineyard Restaurant.
  • Experience a traditional Cape Malay meal
  • Visit 'The Biscuit Mill' a well known Cape Town Food Market

Week 2 optional extra at additional cost of R1100.00 per day

You will be hosted for 4 days in a 4 or 5 star hotel in Cape Town working alongside chefs in that hotel.

You will be transported to and from work to your accommodation for the duration of your experiential programme.

Lunches and dinners

Lunch will be provided daily during your programme

Dinner will be provided on 3 evenings of the programme.


During your stay your programme will be managed by hands-on facilitators who have hospitality training experience in managerial positions. You will be accompanied on all field trips and practicals and they will be on-hand to assist you with whatever you need during your one-week stay in Cape Town.

Feedback and reflection sessions

As part of your programme you will attend one feedback and reflection session where group members have an opportunity to network, share experiences and reflect on their learning.


You will be transported from your hotel back to the airport at the end of your one-week experience.

Our facilitators and training providers have been carefully selected for their subject matter expertise and/or Industry knowledge and experience. Culinary skills classes

Practical culinary classes take place in a training kitchen by a famous Food Alchemist chef Pete Goffe-Wood. 

An Advanced Chocolate Decor Course presented by Demo Simatos of the Lindt Chocolate Studio.

Chefs tables, culinary demonstrations, dining and food experiences

During your programme you will visit 4 top Cape Town Restaurants:

  • Planet Restaurant at the Mount Nelson Hotel headed by Executive Chef Rudi Liebenberg where you will participate in a Chefs Table and enjoy a demonstration. He will be on-hand to answer your questions regarding the menu.
  • Aubergine Restuarant with Chef Harold Bresselschmidt.
  • Lunch at Bread and Wine Vineyard Restaurant with Neil Jewell on the Moresôn Wine Estate.
  • Dinner at Gold Restaurant where you will experience true African cuisine and find out how they create a true African Experience for your guests
  • A morning at 'The Biscuit Mill', a trendy Cape Town Food Market

Programme cost

The cost of the programme is R15 900.00 payable as follows:

  • 30% non-refundable deposit which is payable upon registration

  • The balance is payable 30 days prior to the start of the programme

  • Please note that should you wish to book the industry placement portion then this will cost an additional R1100.00 per day which will be charged accordingly.

Accommodation, flights, meals and spending money


Accommodation has purposely not been included as delegates may work for Hotel Groups that operate in Cape Town and hence can source reasonable accommodation.

AHLE-X has negotiated discounted rates for delegates, to find out more please click here for further information.


Flight bookings also need to be made and paid for directly by the delegate.

Spending money

During the programme there are evenings where you are free and need to cater for dinner on your own. It is estimated that you will need an additional R2000.00 for meals during the programme when you are free on your day off and in the evening. You may also wish to bring additional spending money to take additional tours, visit tourist attractions or shop!
